Nancy's 3 Day Wait Cake
(My friend Nancy's recipe...one of the very best coconut cake recipes EVER! Thanks for sharing Nancy!)
1 butter flavor cake mix
2 cups sugar
1 16 oz.sour cream
1 12oz.pkg frozen coconut, thawed (NO Substitutions!!!!)
1 12 oz.Cool-Whip...thawed
Prepare cake mix according to directions.
When cool split the 2 layers to make 4 thin layers.
Combine sugar, sour cream& coconut blending well.
Chill mixture. Set aside 1 cup of this mix for
the frosting.Spread the remaining mix
between the layers. Combine the Cool-Whip,
cup sugar, sour cream & coconut mixture.
Blend till smooth. Spread on top & side.
Seal the cake in an airtight container & put in
fridge for 3 days before cutting.
This is another BIG shovel cake, LOL
