I haven't reviewed much manga, so I can recall them from memory right now...

Love Hina Let's start with the basic love comedy plot, add in a hot spring, a 15-year-old promise, and a whole lot of fan-service and... oh my gawd... Ken Akamatsu's created a monster hit!
Maison Ikkoku A predecessor to Love Hina (Ken Akamatsu) and, well, all of Rumiko Takahashi-san's series other than Urusei Yatsura, this is definitely something you shouldn't miss out on.
Neon Genesis Evangelion You've watched the anime series to death (or almost died trying to figure out the anime series), but you ain't seen nothin' 'till you've read Yoshiyuki Sadamoto's take on the story... a manga made after the anime that more than rivals NGE, it redefines it.
No Need for Tenchi Tenchi and the gang in all-new original stories. Not one that'll fall down dead in front of Ranma 1/2.
Ranma 1/2 One of the world's greatest anime/manga (because I'm biased toward comedy, damn hypocritical me), this is one hilarious manga. Just don't drink water while reading.
