NO BAKE CARMEL SQUARES:

1 cup brown sugar
|
1 egg, beaten
|
1/3 cup butter
|
1/3 cup milk
|
1 cup coconut
|
1 cup nuts
|
3/4 cup graham cracker crumbs
|
1 teaspoon vanilla
|
Combine brown sugar, egg, butter and milk in a saucepan and cook to boil and remove from heat. Cool and add coconut, nuts, graham cracker crumbs and vanilla. Line bottom of a 13 X 9 inch pan with whole graham crachers, Cover with the above mixture, top with second layer of graham crackers. Frost with frosting made with:

1 1/4 cup confectioners sugar

1/4 teaspoon vanilla
|
2 tablespoons milk
|
Sprinkle with 2 tablespoons graham cracker crumbs and chill for 2 hours. Cut into 2 inch squares, wrap and pack for lunches.

PEANUT COOKIES
|
1 cup brown sugar
|
1 cup white sugar
|
1 cup margarine
|
1 teaspoon vanilla
|
2 well-beaten eggs
|
3 cups oatmeal
|
1 3/4 cups flour
|
1 teaspoon soda
|
1 teaspoon baking powder
|
Mix everything but last three ingredients (flout,soda and baking powder). Sift flour soda and baking powder and add to the first mixture. ADD:

1 cup Spainish peanuts
|
1 cup chocolate bits
|
1 cup spiced gumdrops
|
Drop by teaspoonfuls onto cookie sheet (ungreased). Bake at 350 degrees for 15 minutes.
