Baked Apples
Recipe by Lynn Webb
Serves -- a bunch
10-12 large apples (mix Granny Smith and Jonathan)
2 lemons
1 cup butter
2 cups dark brown sugar
1 cup dried cranberries
1 cup toasted pecans, chopped
1/2 tsp clove
1/2 tsp ginger
1 tsp cinnamon
1/2 tsp salt
1 cup Grapenuts
Combine grapenuts, brown sugar, cinnamon, clove, ginger, and chopped pecans in a
bowl. Reserve 1/2 cup of the mixture for topping.
Prepare a large baking dish (a deep casserole, a lasagna pan, a bunt cake pan....)
with cooking spray and a dusting of flour.
Preheat oven to 350.
Slice unpeeled apples into 8 sections per apple. Toss all the pieces with the cranberries
and salt -- and drizzle them with lemon juice and set aside.
Melt the butter and toss apple/cranberry mixture in it. Gradually add the pecan mixture
until all is mixed, then turn into the baking dish and bake for 25 minutes covered.
Top with remaining topping and continue to bake for 20 minutes or until apples are
tender.
