What I've learned lately....
Well.
As you may have heard, they've found a possible benefit-link between soybeans and estrogen health -- (do a general web search on soybeans and the latest "cancer prevention diet" and you'll have more than you can read....) which is especially important now that polution has created an environment of free-floating estrogen in our everyday breathing...
So the potential good of soybeans and soy products goes up even further --
They say 35g a day of soybeans or soy product should be enough to get the reputed benefit... that doesn't sound too hard to do, does it?
But not all of us are that fond of soybeans and their multitude representations on the market shelf: Tofu sucks. Soy sauce doesn't cut it, estrogen-wise. Soy milk taste like medicine. What's a girl to do?
Enter Boca Burgers!
I heard about them from the Yahoo! daily newsletter a few months ago, but didn't think about it again until I started hearing all the publicity about estrogen health -- and heard a physician say he eats a Boca Burger everyday for lunch. Naturally, I expected the worst, but I tried a package from Whole Foods Market and guess what? It's not bad.
Their site doesn't have very much in the way of recipes, but it's not too hard to figure out. The burgers come in little 2.5 ounce patties that you dry-fry on a griddle or skillet -- then you can crumble them if you want. They also now sell a "ground beef" version, and according to their site, they have a breakfast sausage patty or sausage link.
So far, I've had just a plain little hamburger on a whole wheat bun with lettuce, tomato, pickle, mustard, and a slice of low fat (not fat-free--yik!) cheese. Pretty good.
It's not exactly Texas beef (speaking as a native Texan with cattle ranchers in the family), but considering the soy benefit, the low fat and cholesterol, the high fiber, and a not-offensive taste, I'd say it's a valid trade off most days.
Of course, a good steak is still a good steak. But what's ground up and served on a hamburger -- who's to know?
**My second favorite form of soybeans so far is roasted and salted, like peanuts. 35g is about half a cup of the kind I buy, so it's a good bedtime snack, and good for warding off those crunchy munchies that are only pacified by chomping on something.
Here are a couple of soybean sites (there aren't many except for the agricultural stuff...) with recipes (I haven't tried any yet...)
The American Soybean Association.
