Rhubarb Juice

2-1/2 Rhubarb
2 quarts water
1-1/4 cup sugar
Juice of 2 lemons
Juice of 1 orange
4 whole cloves
Cut rhubarb and stew in simmering water, strain through cheesecloth. Add sugar, lemon juice, orange juice and cloves. Refrigerate and serve cold.

Alcoholic drinks (Homemade wines)
Dogberry Wine (Mountain Ash Berries)#1

Place 2 gallons of berries in a boiler with 1 gallon of water. Boil for 2 hours. Press and strain. Place juice back in boiler for 1 hour adding sugar to taste. When cool, strain and bottle.

Dogberry Wine (Mountain Ash) #2

1 quart dogberries
1 gallon boiling water
4 pounds of sugar plus 1 cup
2 lemons
2 oranges
1 package yeast
Put berries in open crock, add boiling water. Then add sugar and sliced fruit. Stir until sugar is dissolved. Allow to cool, then add yeast, stirring thoroughly. Cover and let sit for 3 weeks, then strain and bottle.

MY OWN MOUNTAIN ASH WINE - makes 1 gallon, recipe may be doubled or tripled.(Except for yeast) 1 pkg wine yeast makes up to 5 gallons.

3 to 4 pounds berries, crushed (best picked after first frost)
4 lbs. sugar
1 gallon boiling water
1 lb. raisins, ground
2 campden tablets, crushed
1 level tsp. yeast nutrient
1/2 tsp. pectic enzyme powder
1 package wine yeast
Crush berries, (do not grind, as seeds are bitter)and grind raisins. Place in primary fermenter, add all ingredients EXCEPT yeast. Stir well. When cooled to 60F you may add yeast. Cover, stir every day for 7 - 9 days. Then rack into secondary fermenter, using fermenting tubes. Rack again in 3 weeks. Let work for 3 months, bottle. Age for 1 year, 2 is even better.
