Quick breads
Banana Bread
1 cup sugar, 1 egg, 1 tsp soda, 2 cups flour, 1/2 cup butter or margarine, 3 mashed ripe bananas, pinch salt.
Cream butter and sugar; add egg and bananas. Mix well. Stir in dry ingredients. Place in greased loaf pan, and bake at 350F for 55 minutes or 1 hour.

Coconut Bread
2 tbsp butter or margarine, 7/8 cup granulated sugar, 1-3/4 cups all purpose flour, 2 tsp baking powder, 1/2 tsp salt, 1 tsp cinnamon, 1 cup milk, 1-1/2 cups shredded coconut, 1 cup raisins of desired.
Method:- Cream butter, blend in sugar gradually. Mix and sift dry ingredients, twice and add alternately with milk to butter mixture. Add coconut and turn into a greased and lightly floured loaf pan. Bake at 350F about 1 hour.

Orange Bread (Mom's)

1 orange (minced), 1 cups sugar, 1 cup water, combine in a saucepan - cook slowly for about 15 minutes, let cool.
Then add:- 1 egg, a little melted butter (about 2 tbsps.), 2 cups flour, 2 tsp baking powder, and a pinch of salt. Mix well. Bake in a well greased loaf pan at 350F for about 1 hour.

Date and Nut Loaf
1 lb. chopped dates, 1 tsp baking soda, 1 cup boiling water, 1 cup white or brown sugar, 1 tbsp butter or margarine, 1 beaten egg, 2 cups flour, 1 tsp baking powder, pinch salt, 1/2 cup chopped nuts, 1 tsp vanilla flavouring.
Method:- Put first five ingredients in bowl and mix well. Add beaten egg, sift together flour, baking powder and salt add to mixture. Stir well. Add flavouring and nuts. Put in greased pan and let sit for 15 minutes. Bake in 350
F from 3/4 to 1 hour.

Delicious Gingerbread
2-1/2 cups all-purpose flour, 1-1/2 tsp baking soda, 1/2 tsp cloves, 1 tsp cinnamon, 1 tsp ginger, 1 cup molasses, 1 cup hot water, 3/4 tsp salt, 1/2 cup shortening, 1/2 cup granulated sugar, 1 egg unbeaten.
Method:- Heat oven to 350F. Grease a 9"x9" pan and line it with waxed paper. Sift together all dry ingredients. Thoroughly cream shortening and sugar, then add egg and beat until very light and fluffy - about 4 minutes. Beat in molasses. Then blend in dry mixture and hot water. Pour into prepared pan. Bake in 350F-375F oven for 25 - 30 minutes or until done. Cool on rack for 10 minutes, then invert from pany, peel off paper and cool on rack.

Pork Buns
1 cup salt fat back pork, 1/2 cup boiling water, 2-1/2 cups flour, 2 tsp baking powder, 1/2 cup molasses.
Cut pork into very samll pieces. Add the molasses to the boiling water and pour over the pork. Sift the flour and baking powder together and add to first mixture. Mix together lightly. Pour into greased muffin pans and bake 25-30 minutes in a moderate oven. (350F)

Pork Cakes
2 cups minced salt pork
3 cups hot mashed potatoes
Mix well together. Add:-
4 cups flour
1 tsp baking powder
1 tsp. baking soda
Mix together with hands and form into cakes of desired size. Bake on cookie sheet in 400F about 1/2 hour or until golden brown.
Not:- I eat these sliced through the cemter and covered with molasses, while they are still warm.

NFLD. Partridgeberry Bread
2 cups flour, 1 cup light brown sugar, 1 tsp baking powder, 1 tsp baking soda, 1/2 cup butter or margarine, 2 eggs (well beaten), Rind and juice of 1 orange, 1 cup light raisins, 1-1/2 cups partridgeberries.
Mix dry ingredients together, crumble butter with dry ingredients - by hand, Add raisins, eggs, orange juice and rind. Add berries. Mix well. Bake at 350F for one hour or when straw inserted in middle comes out clean.
Note:- Cranberries may be substituted for partridgeberries.

Betty's Tea biscuits
2 cups flour
4 tsp baking powder
1/2 tsp salt
mix together, Then cut in
1/2 cup butter, margarine or shortening,
cut in until consistency of small peas.
Then stir in 1 cup milk. Mix then knead for 8 to 10 times. Roll out and cut with biscuit cutter, or just cut in squares. Bake at 425F for 12 to 15 minutes or until golden brown.

Muffins, Doughnuts, etc.
Blueberry Muffins
2-1/2 cups flour, 1/2 cup sugar, 2-1/2 tsp baking powder, 1/2 tsp salt, 1 egg - well beaten,1/4 cup melted butter or maqrgarine, 1 cup milk, 1 cup bluberries.
Method:- Mix together all dry ingredients. Combine egg, milk, and butter. Add quickly to dry ingredients. Fold in berries. Baked in greased or paper lined muffin tins. Bake at 400F for 25 minutes or until golden brown.

Biscuits, Buns, Popovers, etc.
Basic Tea Biscuits

2 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
1/2 cup margarine or butter or shortening
1 cup milk
Combine dry ingredients, then cut in margarine. When consistency if coarse meal, mix in milk with a fork. When all dry ingredients are moistened, gather in a ball. Place on a lightly floured board, knead 8 to 10 times. Roll out to desired thickness (biscuits will double when baked), cut with biscuit or cookie cutter.
Place on an ungreased baking sheet, almost touching for soft sided biscuits or about an inch apart for crusty sided biscuits.
Bake in 450F oven for 12 to 15 minutes.

Raisin Tea Biscuits

3 cups flour
3/4 cup butter or margarine
2 eggs
1 cup milk
5 teaspoons baking powder
1/2 cup white sugar
1-1/2 cups raisins
1/2 teaspoon salt
Combine dry ingredients, rub in margarine until fine. Combine eggs and milk and add to first mixture; add raisins; roll lightly. Cut and bake in 450F oven, until lightly browned; about 10 to 12 minutes.

Popovers
Beat together just until smooth:- 1 cup sifted flour,
1/2 teaspoon salt
1 cup milk
2 eggs
Pour into well greased, deep muffin tins until 3/4 full. Bake at 425F for 40 minutes. (You can use greased custard cups).
