I suppose from a personal point of view the best thing about Ghost Hunting is getting to use all these wonderfull fandangled gadgets???
No honestly I fully understand that it is the actual investigation and the members taking part that counts the most, but using the right equipment can help you record any phenomena or at least help the night pass.
At the very least you should have a notepad and a pen and a torch and also a watch that works ( always syncronise with all present).
A camera with a flash is handy and a tape recorder ( these new digital ones are great as you get no real hiss or feedback)

Remote surveillance camera's with infra red ability
A few years ago ( 1998) we created P.I.P ( Paranormal Investigation Probe) this was a remote controled vehicle with a on board camera,sound recorder and thermometer. We guided this by viewing where it went through a small monitor, all the sensors were connected via 10 core cable. The idea was to use this in cellars and basically anywhere it was cold,dark and damp.
PIP now resides in my garage waiting for the completion of its Mark 2 brother, this will have no wires, everything running via radio wave. It will have two onboard camera's both infra red, one for steering the other on a swivel/tilt base. It will have a directional thermometer, proximity sensors and onboard sound recorders.
It will be based on a electric scooter chassis, cut down to make it lighter and we hope it will have a running range of 8 hours and will transmit about half a mile or more in the open.The real trick is to get it to go up stairs.
This can then explore castles etc in the rain or even trundle into the middle of a crop field looking for clues, whilst we sit in a nice warm support car or room gathering the data on our computers.I know some people may see this as cheating but I have spent too many nights sitting in cold,dark cellars with nothing to show but aching back and the flu???
