Cream of Cauliflower Soup



Ingredients:
- 3 tablespoons margerine
- 1/2 small onion, chopped
- 3 tablespoons whole wheat flour
- 3 cups Riches® non-dairy creamer (1/2 creamer to 1/2 water to make milk)
- 1 head of califlower, broken into flowerets
- salt to taste
- cayenne peper to taste***
- few sprigs of parsley


Directions:
In a large pot, melt marigerine and add onion. Cook a few minutes. Add flour and stir to make a paste. Slowly add milk allowing it to thicken. Add caulifower and simmer about 30 minutes. Add salt and cayenne pepper to taste and serve with parsley.


Yeilds: 6 servings


*** This is a Warning only add cayenne peper slowly to taste if you add to much it will be very very spicey!!! (I am writing this warning from experence!!!)***
