MY OWN SOUTHWEST STYLE SPAGHETTI 1 pound hamburger meat 24 oz thin spagetti 3 cloves fresh garlic 1 large onion chopped up medium size (or more if you love onion. I use about 1½.) 1 26 oz jar spagetti sauce.( I like Paul Newmans Own venetian or Classico Spicey Tomato and Pesto, but what ever rings your chimes. Sometimes I just use regular tomato sauce with some chili powder added. But about 26 oz. to make up for a 26 oz jar of the other. You still need the rest of the sauce in this recipe.)1 14½ or 15 oz can (depends on the brand) of regular tomato sauce 1 14½ or 15 oz can crushed or diced tomatoes. (I have used whole tomatos.OOPs!!! That's tomatoes. Well I could do worse than being compared to Dan Quale, LOL! BTW, How do you spell his name?) 1 medium large egg plant diced about ½ inch or so 1½ heeping teaspoons of oregano leaves 1 teaspoon basil leaves or season to taste with your favorite Italian blend seasoning About ½ to 1 cup chopped fresh cilantro (the dried stuff don't work folks, gotta be fresh). Use caution here as you may not like cilantro, but some is necessesary ¼ to ½ finely chopped fresh Jalapeño(not pickled) A dash or two Chili Powder ¼ cup sugar (very important) Salt to taste Olive oil Brown hamburger in dutch oven or large pot( This should be large enough to hold everything except the spaghetti) to remove fat and drain(get as much fat out as you can). Then remove hamburger and place in a bowl. Then add about ½ cup of olive oil and saute onion, garlic and eggplant til soft. Re-add Hamburger, add Oregano and basil and Jalapeño and stir in all tomatoes and sauces. When this is hot and bubbling stir in sugar. Let simmer barely bubbling for about 20 or 30 minutes. Cook Spagetti. I add about an eighth cup olive oil and a sprig or two cilantro to the water before adding spagetti. About 5 minutes beforeturning heat off sauce throw in cilantro. Drain Spagetti and mix with sauce. This is nice when served with a fresh tossed salad and a glass of good red wine of your choice. Of course, some good garlic bread really tops this off. 1 large honeydew melon, pureed--about 4 cups. (You can use any melon or combination of melons) 1/4 cup finely chopped fresh mint 1/3 cup orange flavored liqueur such as Grand Marnier, Orange Curacao, or Triple Sec. Puree the melon and mint in a food processor or large blender until smooth. Add orange liqueur, stir together and refrigerate for 1-2 hours. Serve well chilled, garnished with a mint leaf. It tastes a lot better than it might sound! And it's SO refreshing on a hot summer's late afternoon. | |||||||||||||||||||||||||

| Apple Pizzas need: 1 can of refrigerated biscuits(10 in a can) 2 large apples peeled and cut into small chunks shredded motzarella cheese brown sugar butter cinnamon DO: 1) place semi-flattened biscuits onto a non-greesed cookie sheet 2) sprinkle each biscuit with apple chunks 3) sprinkle a pinch or 2 of brown sugar and cinnamon on top of apples 4) add 2 butter chunks on top..about the size of a pencil eraser 5) top with motzarella cheese 6) bake at 350 till cheese is melted and slightly brown 7) allow to cool a little and enjoy!
