This is my husband's favorite chicken dish. It is low in fat and very easy to prepare. The secret to achieving the flavor is marinating the chicken overnight in a Greek-style lemon/olive oil mix.

Grecian Chicken

Rinse chicken breasts and pat dry with paper towels. Toss with Kosher salt and set aside. Put the rest of the ingredients in a bowl and whisk until well-blended. Pour over chicken and mix well. Cover and keep this mixture in the refrigerator overnight. Broil chicken until juices run clear - do not overcook. Serve with hot pasta and grilled fall vegetables.
