Pasta Salad

In addition to the rotini, you could add any of your favorite vegetables to this salad.  I use low-fat mozzarella cheese but you could use ricotta or Parmesan if you like.  If tri-color rotini is not available, use plain rotini or any other pasta shape you have in your pantry.

Cook the rotini according to package instructions; cool and set aside.  Dice the peppers; slice the onion and celery.  Slice the black olive horizontally to give you olive rings.  In a big bowl, add all ingredients and mix well.  Add the Italian vinaigrette dressing and blend well.  Chill and serve.
