Tilapia with Ginger Sauce

Tilapia is a delicious freshwater fish usually found in the tropics.  I get my fish in my neighborhood Filipino grocery store.  Since the store does not fillet fish, I have to do this myself.  To save time, I buy and fillet a week's supply of fish over the weekend.  I wrap each fillet in wax paper, put the whole lot in a freezer storage bag and store it in the freezer.  I thaw individual fillets as needed.  The result is a luscious, sweet-tasting fish.  NOTE:  Never overcook fish or you'll end up with a sweet-tasting piece of rubber.

Spray a stovetop grill pan with non-stick spray and place over medium-high heat.  When pan is hot, add the tilapia fillets skin side up and cook for two minutes.  Meanwhile, prepare the sauce - put a small saucepan over medium heat.  Add olive oil and toasted sesame oil, heat for one minute.  Add garlic and ginger and cook for half a minute.  Add white wine and simmer.

Go back to the tilapia fillets in the grill pan.  Turn them over and cook for another two to three minutes.

Add the scallions to the ginger sauce and turn off heat.  Pour sauce over tilapia.  Serve fish over steamed rice with wilted spinach (or your choice of steamed vegetable) on the side.
