Some of our favorite Thanksgiving recipes

 

GIBLET GRAVY

Turkey Giblets and neck 1 bay leaf
1 med. onion, chopped 1 chicken bouillon cube
handfull of celery tops 4 c. water
1 tsp. salt 1/2 c. flour

Combine turkey giblets (except liver) and neck with onion, celery tops, salt, bay leaf, bouillon cube and water in a saucepan. Simmer 1 hour, or until tender. Add liver during last 20 minutes of cooking, Strain broth; measure; add water, if needed, to make 4 cups. Chop giblets fine and stir into broth. Cool, then chill unitl ready to make gravy. (This much can be done a day ahead.)

After turkey has been removed from roasting pan, remove rack, if used; tip pan and let fat rise in one corner. Pour off all fat into a bowl, leaving juices in pan. Return 8 tablespoons fat to pan, thn blend in flour. Cook stirring constantly, just until bubbly. Stir in the 4 cups stock and giblets. Continue cooking and stirring, scrapping baked-on-juices from bottom and sides of pan, until gravy thickens and boils 1 minute. Season to taste with salt and pepper. Makes about 4 cups.

CARROTS DELUXE

6 medium carrots, pared in thin strips 1 Tbsp. chopped parsley
1 Tbsp. margarine 1 Tpsp. lemon juice
1 Tbsp. chopped chives 2 tbsp. water

Melt margarine in a saucepan; add lemon juice. Arrange carrots in layers in a baking dish. Between each layer pour in the lemon juice and margarine mixture and sprinkle with chives and parsley. Add the water.

Cover and bake at 350 until the carrots are tender, about 50 minutes. Makes approximately 4 servings.

SWEET POTATO MEDALLIONS

6 Medium sweet potatoes 1/4 tsp. ground ginger
2 medium apples 1/4 tsp. ground nutmeg
3/4 c. packed brown sugar 1/2 c. flaked coconut
1/4 c. butter, melted

Peel sweet potatoes and slice into rounds 1/4 inch thick. Cook, covered, in 2 inches boiling salted water 10 minutes or until almost tender. Drain. Peel and core apples. Cut into 1/4 inch thick slices. Combine brown sugar, butter, ginger and nutmeg. In a 10x6x2 inch baking dish layer 1/3 of the potato slices and then 1/2 of the apple slices. Spoon 2 tablespoons brown sugar mixture over apples. Repeat layers once. Arrange remaining potatoes on top. Spoon remaining brown sugar mixture over all. Bake, covered, at 325 40 minutes. Uncover. Baste potatoes with brown sugar mixture from bottom of dish. Sprinkle coconut around edges of dish. Bake, uncovered, 15 minutes longer or until coconut is lightly browned. Baste potatoes with brown sugar mixture. Makes 8 servings.

7UP CRANBERRY PUNCH

2 c. Cranberry juice 4 1/2 c. Chilled 7UP
3/4 c. pineapple juice Lemon slices
1/4 c. lemon juice

Mix fruit juices in pitcher; refrigerate until chilled. At serving time, pour juice mixture into punch bowl. Stir in 7UP; garnish with lemon slices.

7UP SPICED CIDER

1 tsp. Whole cloves 1/2 c. Paked brown sugar
1 Stick cinnamon 1/4 tsp. Salt
1 tsp. Whole allspice 1 Orange, if desired
2 qts. Apple cider 3 c. 7UP, chilled

Tie 1 teaspoon whole cloves, the cinnamon and allspice in small clotrh bag. Mix cider, sugar and salt in large saucepan; add spice bag.

Heat to boiling. Reduce heat; cover and simmer 20 minutes. Remove spice bag. Cool to room temperature; refrigerate until chilled.

Stud orange with cloves. Pour cider mixture into punch bowl; stir in 7UP. Place orange in punch bowl.

OLD FASHIONED PUMPKIN PIE

1 9-inch Unbaked pie shell 2 c. Canned pumpkin or cooked pumpkin pulp
4 Eggs, separated 1/3 c. Heavy cream
1 c. Brown sugar 1/4 c. Butter, melted
1/2 tsp. Salt 1 tbsp. Cornstarch
1/2 tsp. Allspice 1/4 c honey
1/2 tsp. Nutmeg

In a large mixing bowl combine beaten egg yolks, brown sugar, salt, spices. Blend thoroughly. Stir in pumpkin, cream and melted butter, till well mixed. In a separate bowl beat egg whites with cornstarch to stiff-peak stage. fold into pumpkin mixture. Pour into pie shell and bake at 450 15 minutes. Reduce heat to 350 and bake 20-25 more minutes. When pie is cooled and just before serving, pour honey over top.
