REPUBLICAN CAKE= by Tammy { my daughter }

CRUST: 1 1/2 c. flour~~~ 1 cube margarine~~~ 1 1/2 T. sugar~~~

Mix, spread and press into 9 x 13 pan. Bake at 350 degree oven for 15 minutes. Chill.

LAYER 1: 1-8oz. pkg. cream cheese~~~ 1 c. powdered sugar~~~ 1/2- 8oz. carton of cool whip.

Mix and spread over chilled crust.

LAYER 2: 2-4oz. instant pudding (chocolate or fudge best)~~~3 c. cold milk

Mix until thick and spread over cream cheese, let set 1/2 hour in fridge. Then take the rest of the cool whip and spread over top. That's it...oh, it sounds so good!

STUFFED FLANK STEAK= by Joyce { co-worker }

Per crock pot~~~combine 1 1/2 c. packaged bread stuffing~~~ 1-3oz. can sliced mushrooms~~~ 2 Tbs. melted butter or margarine ~~~ 2 Tbs. grated parmesan cheese~~~ 2 Tbs. finely chopped onion~~~dash salt~~~1 slice american cheese crumbled.

Spread this mixture over~~~ 1 (1-1 1/2 lbs. flank steak-scored on both sides). Then roll up like a jelly roll. Fasten with skewers or string. Pour 2 Tbs. salad oil into crock pot. Roll steak in the oil coating all of the sides.

SAUCE/GRAVY: 1 pkg. brown gravy mix~~~ 1 can campbell's golden mushroom soup~~~ add enough water for gravy to be thick (about 2 cans).

Combine all of the ingredients together as listed. Pour over the steak, cover and cook on low setting for 8-10 hours. Remove from pot, slice, serve sauce over meat. Makes 4-5 servings. Oh, give me a fork, and plate, sounds good.

BABY CAKE= by Linda { co-worker}

2 c. flour~~~2 c. sugar~~~1 tsp. soda~~~1 tsp. baking powder~~~1 tsp. cinnamon~~~1 can (15oz.) peaches (drained and chopped)~~~1 tsp. cloves~~~3 eggs~~~1 c. wesson oil~~~1 tsp. salt~~~1 tsp. vanilla~~~1 c. nuts, chopped~~~1/2 c. raisins.

Mix all ingredients together. Bake at 350 degree oven for 50 to 60 min. While still hot add topping.

Topping: Mix togehter 1 c. powdered sugar and 2 tsp. lemon juice. Makes 2 loaves. Sounds so good!

OVERNIGHT SALAD= by Terry { friend }

1 head of lettuce~~~1 c. celery~~~4 hard boiled eggs~~~1-10oz. pkg. of frozen peas (uncooked)~~~1 med. onion~~~8 slices of bacon (fried crisp & crumbled)~~~1 c. mayonaise mixed with 2 Tbs. sugar.

Layer as listed. Spread mayonaise on the top like frosting and top with grated cheese. Place a top on the dish and refrigerate overnight. You may add water chestnuts, radishes, tomatoes etc. if desired. Hey, that will go good with the flank steak!

ENGLAND COOKIES= by Goldie { mother-in-law }

1 c. shortening~~~3/4 c. brown sugar~~~1 egg (beaten)~~~1 1/2 tsp. vanilla~~~1 1/2 c. flour~~~1 1/4 tsp. baking powder~~~3/4 tsp. salt~~~rolled oats or quick oats.

Combine ingredients except oats. Chill for easier handling. Roll into balls the size of walnuts. Roll each cookie into oats decorate with marachino cherries. Bake on greased cookie sheet at 375 degrees for 10-12 minutes. Sounds good!

SHORT CUT LASAGNA= by Tammy { my daughter }

You will need: 1 T. oil~~~1 1/2 pounds of ground beef~~~1 can (12 or 16oz.) diced tomatoes~~~1 can (8oz.) tomato sauce~~~2 envelopes spaghetti sauce mix~~~2 (12oz.) cans V-8 juice~~~1 pkg (1 pound) lasagna noodles~~~1 (12oz.) carton cottage cheese~~~8 oz. mozzerella cheese, shredded~~~1/4 c. grated parmesan cheese.

In a very large skillet or pan, heat oil, add meat, and brown. Stir in tomatoes, tomatoe sauce, sauce mix, and V-8 juice. Simmer 10 minutes.

Cover bottom of oiled 13X9X2 pan with thin layer of sauce. Add layer of each: uncooked noodles, cottage cheese, parmesan cheese & mozzerella cheese. Repeat and end with meat sauce.

Cover tightly with heavy foil. Set on a cookie sheet in a 350 degree oven for 1 hour. NOTE= layer everything thin or you will run out before your finished. This is soooo good!

DANISH BEAN CASSEROLE= by Barbara { co-worker }

1 can kidney beans(do not drain)~~~1 can butter beans(do not drain)~~~3 cans baked beans(do not drain)~~~1/2 pound bacon~~~1 pound hamburger( lean )~~~1 sm. onion( chopped) ~~~ketchup, mustard, honey, to taste.

Fry bacon and drain, then set aside. Cook hamburger, mix all ingredients together and bake 350 degrees for 1 hour. Hey, this sounds very good to me, I am ready.

BANANA SPLIT DESSERT= by Monica { co-worker }

Crust: 2 c. graham crackers crumbs (28 crackers)~~~1/2 c. margarine or butter, melted. *In large bowl, stir together graham crackers crumbs and melted butter. Firmly press the mixture into bottom of 13x9 pan.

Filling: 2 c. sifted powdered sugar~~~1 (8 oz.) package cream cheese, softened~~~1 (8 oz.) container frozen cool whip, thawed~~~4 large bananas~~~1 (21 oz.) can crushed pineapple, drained~~~1 (21 oz.) can cherry pie filling~~~1 c. chopped pecans(optional). * In large bowl,beat the powdered sugar and cream cheese with electric mixer until combined. Carefully fold 1/2 of whipped dessert topping into the mixture.

Spread filling on top of chilled crust. Set aside. Slice bananas, arrange on the top of filling. Top with crushed pineapple. Then cover the pineapple layer with cherry pie filling. Cover and refrigerate the dessert for 4-8 hours. Garnish each serving with remaining cool whip and sprinkle with pecans, if desired. MMMMMMM enjoy.

QUICK AND HEALTHY FISH= by Diana { co-worker }

1/4 c. find bread crumbs~~~1/4 c. Parmesan cheese~~~1/2 tsp. dried thyme~~~1/4 tsp. dried basil~~~1/8 tsp. onion powder~~~1/8 tsp. pepper~~~1 lb. white fish fillets (such as sole, cod, snapper)~~~1/4 c. egg substitute (equal to 1 egg)~~~4 lemon wedges. * Preheat oven to 400 degrees. Combine bread crumbs with Parmesan cheese and seasonings. Mix well. Dip fish in egg, and then coat with bread crumb mixture. Arrange on a baking sheet that has been sprayed with non-stick cooking spray. Bake for 10 minutes per inch of thickness, or until fish flakes easily with fork. Serve with lemon wedges. **Yield: 4 servings~~~1 serving: 1/4 recipe~~~Per serving: 182 calories, 8 grams carbohydrates, 28 grams protein, 4 grams of fat. Really sounds healthy, a must try.

ZUCCHINI BREAD= by Kathie { co-worker }

3 eggs~~~3 cups flour~~~2 cups sugar~~~2 cups bananas, zucchini or applesauce~~~3/4 cups oil~~~1 tsp. vanilla~~~1/4 tsp. baking powder~~~1 tsp. baking soda~~~1/2 tsp. salt~~~2 tsp. cinnamon~~~

Mix all the ingredients together. Makes 1-2 loaves of bread depending on size of pan. Bake at 350 degrees for 45min. to 1 hr.

You can add chopped nuts, chocolate chips etc. whatever you like.

Enjoy the bread we do in fact have friends and family all stand in line for the next loaf. Sounds really good, Kathie.

BERRY COBBLER= by Barbara { co-worker }

1 c. flour~~~2 Tbs. sugar~~~11/2 tsp. baking powder~~~1/2 tsp. cinnamon~~~1/4 c. butter~~~6 c. fresh or frozen berries~~~1 to 1 1/4 c. sugar~~~4 tsp. cornstarch~~~1 egg~~~1/4 c. milk.

TOPPING= in med. bowl stir together flour, 2 Tbs. sugar, baking powder, cinnamon. Cut in butter till ressembles coarse crumbs. Set aside.

FILLING= combine berries, rest of sugar, cornstarch, 1/4 c. water. Let stand for 10 minutes, (20 for frozen). Cook and stir until thickened and bubbly. Keep hot.

In a small bowl stir together the egg and milk. Add to flour mixture. Stir untill just moist. Transfer to 2 qt. square baking dish. Using a spoon drop topping into small mounds atop filling. Bake at 400 degrees for 20 to 25 minutes.

Sounds great Barb, you must make it and bring it to work.
