Country Dinner Menu of the Week
Yumzetti
2 cups noodles
1 pound hamburger
1 can cream of celery soup
1 can cream of mushroom soup
1 can tomato paste
1 package wide noodles
6-8 slices Velveeta cheese
Brown hamburger. Cook noodles until tender. Mix together soups and tomato paste. Put in layers in casserole. Bake at 350* for 45 minutes, then remove and add cheese on top. Return to oven until cheese has melted.
Carrot & Raisin Salad
1/2 cup raisins
1 tablespoon orange juice
1 teaspoon grated orange peel
1/2 cup mayonaise
1 teaspoon lemon juice
3 cups grated carrots
Cover raisins with warm water; soak until plump. Drain. Mix mayonaise with raisons, juices and orange peel. Add to carrots; toss lightly with fork. Serve on salad greens. Makes six servings.
Pudding Pecan Pie
1 package vanilla pudding/pie filling
1 cup corn syrup
3/4 cup evaporated milk
1 egg slightly beaten
1 cup chopped pecans
1 unbaked 8-inch pie shell
Blend pudding mix with corn syrup. Gradually add evaporated milk and egg, stirring to blend. Then add pecans. Pour into pie shell. Bake at 375* until top is firm and just begins to crack - about 40 minutes. Cool at least three hours.
