Mock Champaign
If you have children, like me and want to make New Year's Eve just as special for them, I make Mock Champaign. There is never any left.
1 bottle (64 oz.) white grape juice
1- 2 liter bottle of Sprite
Mix the juice and sprite in equal amounts.
Garnish with orange slices, maraschino cherries, or strawberries.
PINA COLADA PUNCH
One 10-ounce pina colada frozen concentrated fruit mixer, thawed
One 5-ounce pineapple juice frozen concentrated, thawed
One 1-liter ginger ale
Mix together well in punch bowl or pitcher.
Add 5 cups crushed ice.
Add pineapple sherbet, if desired.
VANILLA COKE
2 ounces vanilla syrup
Coke to fill
Serve in a mason jar over a scoop of ice cream.
Garnish with a cherry and two straws.
Smoked Pork and Black-Eyed Peas with Collard Greens
10 large collard green leaves, washed and cut into 1/2-inch-wide strips
2 tablespoons peanut or olive oil
2/3 pound boneless, cooked and smoked pork chops, cut into 1/2-inch chunks
1-1/2 cups cooked black-eyed peas or 1 (15-ounce) can cooked black-eyed peas, drained
1/4 cup sweet-hot mustard
1/4 cup prepared hot sauce
3 tablespoons molasses
1 scant teaspoon ground caraway seeds
3 tablespoons unsalted butter, cut into small pieces, optional
1/3 cup water
Salt, pepper
6 prebaked buttermilk biscuits, each biscuit cut in half (top and bottom)
Using large
pan, cook collard greens in oil over moderately high heat 5 to 7 minutes, stirring frequently.
Add pork, black-eyed peas, mustard, hot sauce, molasses, caraway seeds, butter and water.
Mix well.
Cook 7 to 8 minutes, stirring occasionally, until greens are nearly tender and mixture is thickened slightly.
Season to taste with salt and pepper.
Remove from heat.
Cool slightly.
Cover bottom of lightly greased 2-quart round baking dish with biscuit bottoms.
Spoon in filling.
Cover with biscuit tops.
Bake at 400 degrees on center rack 30 to 35 minutes or until filling is hot.
Remove from oven and spoon onto plates, allowing 1 biscuit per person.
Makes about 6 servings.
Cabbage Rolls

For new years we have Hungarian cabbage rolls, blackeyed peas, collard greens, corn bread, and cole slaw.
Recipe for Hungarian cabbage rolls:
Put one large head cabbage in large pot of salted boiling water.
Boil on medium for 20 minutes or till tender. Leave it on the stove and with a knife and fork, cut off one leaf at a time and follow the following directions:
Work together with hands
1 lb. hamburger
1 lb. sausage
1/2 small box instant brown rice
2 large diced onions
1/2 pod diced green pepper
1 T. parsley
4 T. kraut
4 T. canned tomatoes, diced
1 t. salt
1 t. pepper.
Grease bottom of large pot.
place about 1/2 cup mixture on cabbage roll and roll up like an egg roll, tucking ends and trimming hard core top.
Line pot with cabbage rolls.
Sprinkle about 1 cup kraut and 1 cup tomatoes over rolls.
Repeat to make 2 to 4 layers.
Cook on medium heat for about 2 hours.
