Cherry Easter Biscuits

1/2 cup butter
1/3 cup confectioners sugar plus 1-2 tbs. for sprinkling
1 egg, separated
1 cup plain flour
1/2 tsp. ground ginger
1/2 tsp. ground cinnamon
1/3 cup dried cherries

1.   Preheat oven to F. 400
2.   Grease a baking sheet.
3.   Cream butter and sugar together in a bowl.
4.   Beat in the egg yolk.
5.   Sift the flour, ginger and cinnamon together into the creamed mixture.
6.   Add the dried cherries.
7.   Knead the dough on a lightly floured surface.
8.   Roll out to 1/4 inch thickness.
9.   Use a 3 inch cutter to cut out 12 biscuits.
10.Place on the sheet.
11.Bake for 10 minutes.
12.Lightly beat the egg white.
13.Remove biscuits from the oven, brush with egg white.
14.Sprinkle with confectioners sugar.
15.Bake for a further 5 minutes until golden.
