4 Cornish hens
3 cups long grain and
wild rice cooked in chicken broth
1/2 cup chopped celery
1/4 cup chopped onions
1/2 lb. pork sausage,
browned
poultry seasoning to
taste
1.
Wash and pat dry hens.
2.
Mix all other ingredients.
3.
Stuff each bird.
4.
Place in shallow baking dish.
5.
Place extra stuffing around birds.
6.
Bake at 350 degrees for 2 hours.
Note:
Left over hens can be split in half with stuffing in them and frozen for
future
use.
