4 Tbs. butter
2 Tbs. flour
1 1/2 c. milk
1 1/2 cups diced leftover
ham
6 hard-cooked eggs, shelled
and chopped
1/4 c. chopped celery
1/4 tsp. pepper
2 c. biscuit mix

Melt butter in a small saucepan.

Stir in flour.

Stir in milk.

Cook, stirring constantly, until sauce thickens and boils 1 minute.

Measure out 1/4 cup; set aside.
6.
Stir ham into remaining sauce in pan.
7.
Mix eggs, celery, pepper and 1/4 cup sauce in medium bowl.
8.
Prepare biscuit mix with water, following label directions.
9.
Roll out to a rectangle, 15 x 9-inch;.
10.Spread
egg mixture evenly over dough.
11.Starting
at one long side, roll up, jelly roll fashion.
12.Place,
seam side down, on a greased cookie sheet.
13.Bake
at 375 degrees for 30 minutes.
14.Cut
crosswise.
15.Serve
with ham sauce.
