Chimichangas

1 pound ground meat
1 medium onion, chopped
1/2 cup red chile sauce or enchilada sauce
12 flour tortillas
oil for frying
2 cups cheddar cheese, shredded
2 cups shredded lettuce
2 cups chopped green onions

1. In a large skillet, brown meat and drain.
2. Add onion and chili or enchilada sauce.
3. Spoon about 3 tablespoons of meat filling in center of each tortilla.
4. Fold tortilla, tucking in ends and fasten with toothpick.
5. In a large frying pan, with 1 inch of oil over medium high heat, fry folded  tortilla, turning
    until golden brown about 1 to 2 minutes.
6. Drain on paper towels and keep warm.
7. Garnish with cheese, lettuce and onion.

Yields 12 chimichangas
