2 cups Bisquick
2/3 cup milk
3-4 tomatoes, diced
1 (4 oz) can green chiles
1 cup sour cream
3/4 cup mayonnaise
1 cup grated cheddar
cheese
1 onion, chopped
Paprika, chili powder,
or crushed red pepper flakes
1.
Mix Bisquick and milk to form a soft dough. (Don't be alarmed--this
is a real sticky dough!)
2.
Press (works better if you use "wet" or "greased" hands!) into a
greased 7 x 11 pan, (this
makes a thick crust. I use a 9x13 pan for a thinner crust version
and we like it better!)
pushing up edges slightly to form a rim.
3.
Brush with melted butter.
4.
Place tomatoes on crust, salt and pepper to taste.
5.
Sprinkle half the can of chiles over tomatoes.
6.
Combine sour cream, mayonnaise, cheese and onion.
7.
Spread over tomatoes and chiles.
8.
Sprinkle with other half of chiles and with your choice of paprika, chili
powder, or crushed
red pepper flakes (paprika or chili powder will add color,
crushed red pepper flakes will
add extra heat!).
9.
Bake at 425 for 25-30 minutes.
