7 slices Bacon
1/2 cup Onion diced
1/2 cup sliced Ham
1/2 lb. (2-1/2 cups) Mushrooms diced
1/2 cup (4 oz). Swiss Cheese grated
2/3 cup Parmesan Cheese grated
1 cup Mayonnaise
6 Muffins (English Muffins preferred) sliced in half
Cayenne Pepper and Paprika

Preheat oven to 400 degrees F.

Fry bacon at medium heat until crisp.

Remove and drain, leaving 1 tsp. of drippings.

Break or cut up into 1/4 inch pieces.

Saute onions for 1 minute in bacon drippings

Add ham and fry for 1 more minute.

Add mushrooms and fry until mushrooms start browning, then remove
and cool.
8.
In a large bowl, combine the bacon, onion, ham, mushrooms, cheeses
and mayonnaise.
9.
Butter the 12 muffins
10.Then
spread mixture on and put muffins on a cookie sheet.
11.Bake
15 minutes.
12.Remove
and serve with a dash of cayenne pepper and paprika on top.
