cup buttermilk baking mix

cup smoked ham, fully cooked, cut up

cup green bell pepper, seeded and chopped

scallions, sliced

Tbs. unsalted butter

cup shredded cheddar cheese

Combine first 3 ingredients and salt and pepper to taste in a bowl and
mix with a fork.
Mixture will be lumpy.

Stir in ham, green pepper and scallions.

Melt butter in a heavy nonstick skillet over medium heat until melted
and bubbly.

Gradually pour ham mixture into skillet.
5.
Cover and cook 10-12 minutes over medium low heat, until almost set.

Sprinkle with cheese.

Cover and cook 3-5 minutes more, until cheese is melted.
