Ham and Cheddar Skillet Pie

1/2 cup buttermilk baking mix
1/4 cup milk
6 eggs
1 cup smoked ham, fully cooked, cut up
1/4 cup green bell pepper, seeded and chopped
2 scallions, sliced
2 Tbs. unsalted butter
1 cup shredded cheddar cheese

1. Combine first 3 ingredients and salt and pepper to taste in a bowl and  mix with a fork.
    Mixture will be lumpy.
2. Stir in ham, green pepper and scallions.
3. Melt butter in a heavy nonstick skillet over medium heat until melted  and bubbly.
4. Gradually pour ham mixture into skillet.
5. Cover and cook 10-12 minutes over medium low heat, until almost set.
6. Sprinkle with cheese.
7. Cover and cook 3-5 minutes more, until cheese is melted.
