Herbed Pork Tenderloin

1 pound pork tenderloin
2 cloves garlic, crushed
2 teaspoons Dijon mustard
2 tablespoons fresh chives, minced
2 tablespoons herbs (Good Choices:  rosemary, parsley, thyme, and tarragon.), minced.

1. Preheat oven to 375.
2. Butterfly pork loin (cut 3/4 of the way through the middle lengthwise so  that the tenderloin
    opens like a book).
3. Combine mustard and crushed garlic.
4. Rub all the surfaces of the pork loin with the mixture.
5. Mince chives and other assorted fresh herbs.
6. Spread herb mixture in the middle of the butterflied loin.
7. Close the two sides and anchor together with toothpicks.
8. Spray baking pan with vegetable oil spray.
9. Place tenderloin in pan.
10. Bake about 40-50 minutes. (Do not overbake will try out pork)
11.Slice into 8 equal slices.
