1 lb. Pork (chopped)
1 Cup onions
3/4 Cup Bell peppers
1/4 Cup celery
1 Cup sugar
3 Cups water
1 1/2 Cups uncooked rice
1.
Chop onions, peppers and celery.
2.
Brown the pork tenderloins in grease.
3.
Once browned, remove from heat.
4.
Add onions, peppers and celery.
5.
Saute Trinity for about 5 minutes.
6.
Return pork to pot.
7.
In a frying pan, place sugar on medium heat.

Stir until sugar is caramelized (the darker, the better)
9.
Add 1 cup water to mixture.
10.Stir.
11.Add
mixture to pork.
12.Add
rice to mixture.
13.Add
2 cups water.
14.Cover.
15.Continue
to cook on medium heat till rice is done.
16.Remove
from heat.
17.Serve.
