All models benefit from an undercoat. Whether it's black or white, painted or sprayed, all models will benefit from an undercoat. If you undercoat then your models will not chip as easily, and other layers of paint will appear clearer.
White or Black?
Most painters prefer a black undercoat. It doesn't really matter if you use black or white, and each has its advantages. Black undercoats allow you to easily shade and add black lining to your models. Areas you miss, on purpose or by accident will not show up as much as they would with a white one. White can also be useful as colours painted over white will appear brighter. Some models benefit from a white undercoat such as Tyranids and Deathwing Terminators.

Spray or Paint?
Spray is usually preferred over painted undercoats as it is much easier and quicker. The finish is always smooth and even, so it is easier to paint over and work with. I recommend using spray, but similar effects can be achieved using spray, if you keep your paint thin and even. This may however take a few coats, so spray would be quicker
